In order to make the cashew cream, you need:

  • ½ cup of raw cashews. You need to soak them overnight.
  • 1 to 1 ½ cup of water

  • 1 cup of pecan halves. It must be toasted.
  • 1 cup of oat flour
  • ¼ cup of brown sugar
  • 1/3 cup of vegan butter
  • ½ tbsp. cinnamon
  • Salt

For doing the filling, you need the below-mentioned items:

  • 1 cup of pumpkin puree
  • 1 cup of cashew cream
  • 2 eggs
  • ½ cup of browned sugar
  • 1 tsp. cinnamon
  • 1 tsp. ground ginger
  • 1 tsp. nutmeg
  • 1/8 tsp. ground cloves
  • ¼ tsp. sea salt
  • ¼ tsp. allspice

For toppings, you can use chopped pecans and coconut cream or whipped cream.

  • First of all, you will have to make the cashew cream. You can soak the cashew in water and then, you need to drain the water. After that, you will have to put them into a blender and blend it for at least 3 minutes. This is how you can make cashew paste.
  • Then, preheat the oven to 400 F.
  • Now, you will have to make the crust. The process is very simple. You need to take a food processor and then, put all the ingredients that you have taken for the crust. 
  • Now, you will have to put the pecan mixture into a bowl and then you will have to press the crush evenly using your fingers.
  • Now, bake the crust for at least 12 minutes.
  • After that, you will have to make the filling. Take a bowl and then add all the ingredients that you took for filling. Whisk them until you get a smooth texture.
  • In the final step, you will have to pour the filling into the baked crust. Now, you will have to bake it for at least 50 minutes. Your dish will be ready.
